The Calisson is a traditional french delicacy originating from the Aix-en-Provence region. The calisson has remained unchanged since his creation in the 16th century. Complex mixture of finely grounded sweet almonds, candied provencal fruits, set on a thin layer of wafer and topped with royal colourful natural icing, it has always been made in the same way through the years by our french confectionners.
